2013 Stillwater Creek Chardonnay |
Chardonnay exposed. Fruit, not wood! Whole clustered pressed, its juice went direct to stainless steel tank with no SO2 additions until fermentation was complete where it remained sur lie (extended yeast lees contact) for improved mouth feel and flavor development. This clean, woodless style with wonderful acidity, balance and an expression of mineral highlights the delicate Chardonnay grape. An array of tropical fruit, guava, pineapple, banana..., pear, a touch of green apple, hint of lemongrass (less lemon) and Colville Street Patisserie’s Kouign-aman (a yeasty, fruitless, laminated pastry) create a delightful flavor profile with a slight unctuous texture.
